This autumnal salad fueled me up one crisp October afternoon. After getting news that my relationship with carbs was getting unhealthy, I opted for a lunch less made of bread. This salad is inspired by Medici’s pizza featuring apples and ham.

Hans Salad 1

Prep time: 10 minutes

Serves 2


2 cups romaine lettuce

1 cup baby spinach

1 cup arugula

1 apple (I used Gala, but tart apples work well also!)

3 slices leftover Canadian bacon (or any type of ham)


1 tablespoon olive oil

1 tablespoon balsamic vinegar

1 tablespoon honey mustard

1/8 teaspoon salt

2 pinches black pepper


  1. Wash and chop lettuce, spinach, and arugula to desired size

  2. Slice Canadian bacon

  3. Cut apple into small cubes

  4. Combine lettuce, spinach, arugula, Canadian bacon, apple in a bowl

  5. In a small jar or sealable container, combine olive oil, balsamic vinegar, honey mustard, salt, and pepper.

  6. Vigorously shake jar to emulsify

  7. Drizzle dressing over salad and enjoy!
