This autumnal salad fueled me up one crisp October afternoon. After getting news that my relationship with carbs was getting unhealthy, I opted for a lunch less made of bread. This salad is inspired by Medici’s pizza featuring apples and ham.
Prep time: 10 minutes
2 cups romaine lettuce
1 cup baby spinach
1 cup arugula
1 apple (I used Gala, but tart apples work well also!)
3 slices leftover Canadian bacon (or any type of ham)
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon honey mustard
1/8 teaspoon salt
2 pinches black pepper
Wash and chop lettuce, spinach, and arugula to desired size
Slice Canadian bacon
Cut apple into small cubes
Combine lettuce, spinach, arugula, Canadian bacon, apple in a bowl
In a small jar or sealable container, combine olive oil, balsamic vinegar, honey mustard, salt, and pepper.
Vigorously shake jar to emulsify
Drizzle dressing over salad and enjoy!
